1 quart water
2 tsp. salt
2 carrots, peeled and sliced
1 onion, sliced
1 branch celery
1 (4 to 5 pound) chicken cut into pieces
1 c. milk
1/3 c. flour

Parsley dumplings:
2 c. flour
3 tbsp. baking powder
1 tsp. salt
1/4 c. finely chopped parsley (or other herb)
1/4 c. shortening
1 c. milk

Directions:
Directions:
Heat water to boiling. Add salt, vegetables, and chicken. Cover and simmer (not boil) 2 1/2 to 3 hours, or until chicken is tender. Remove chicken from broth and keep warm. Strain broth and measure. Add enough water to make 3 c. Return broth to saucepan and heat. Pour milk and flour in a jar with cover and shake until mixture is smooth. Add slowly to hot broth, beating with wire whisk to keep smooth. Cook about 5 minutes. Add chicken to gravy.
For dumplings: Sift together flour, baking powder, and salt. Add herbs. Cut in shortening until mixture looks like coarse cornmeal. With a fork, mix in milk to make a soft dough; stir as little as possible. Drop by spoonfuls onto chicken pieces into broth. Simmer 10 minutes, uncovered. Cover and simmer 10 minutes longer. Serve at once.
