1 cup reduced sodium soy sauce
1/2 cup packed brown sugar
2 lbs beef tenderloin, trimmed
Kosher salt and fresh ground pepper to taste

4 bunches scallions
1 red, orange, yellow and green pepper, julienne
2 tsp olive oil

Directions:
Directions:
Whisk soy sauce and brown sugar in a bowl until sugar is dissolved. Reserve 1/2.
Cut beef crosswise into 1/4 inch slices.
Trim excess fat or connective tissue if needed.
One at a time, place slices between plastic wrap and press or gently pound into 1/8 inch slices.
Take care not to tear the slices.

Dip the beef in half the soy mixture one at a time and place on baking sheet with sides.
Sprinkle with salt and pepper.
Cover and marinate for 8-10 hours in the refrigerator.

Slice the peppers, julienne, and cut the scallions into 2-3 inch pieces.
Toss in olive oil.

To assemble the bundles:

Arrange 2 onions and 3 peppers (one of each color) parallel to the shortest width of the beef. Roll them up and secure the beef with a toothpick.

Broil or Grill for 2-4 minutes (turning at some point).
Use reserve marinade for dipping, if desired.
