Olive oil
2 Lbs. boneless, skinless chicken breast
1 large chopped onion
several cloves of garlic
2 cups of chicken broth
1 can chopped green chilies
2 cans cannelloni beans, don't drain
large jar of corn and bean salsa


Directions:
Directions:
Cut the chicken into cubes and cook in the olive oil. Saute the chilies, onion and garlic. Place the chicken, onion, garlic, chicken broth, green chilies and salsa into a large pot or crock pot.

Add spices: tarragon, oregano, red pepper, ground cumin and fresh parsley or cilantro. (Add whatever spices you like).

Simmer 2-3 hours and then you can serve with cheese and sour cream.
