1/4 Cup Flour
1/4 Cup Bacon grease or vegetable oil
Garlic salt
Chili Powder
Cumin
Salt and Pepper
Jalapeno Salt

This recipe is very forgiving and don't necessarily have firm measurements.

In a skillet, heat oil or bacon grease until hot and add flour, stirring constantly. The paste should be fairly loose, so add more oil if needed. Stir until the flour turns light brown.

Add seasoning into the browned flour: Garlic salt, salt and pepper, jalapeņo salt, about one small palmful of cumin, and a larger palmful of chili powder. The chili powder will make the gravy reddish in color, add as much as you need to get to the color you like.

Add water to make the sauce thinned stir to avoid lumps. If the sauce does get lumpy, use the hand blender until smooth. Keep tasting the sauce, and let cook about 10 minutes to mature the flavor. I like to make the sauce a littler over seasoned to make up for the blandness of the cheese.
