4 filet mignon steaks (4 oz each)
1/4 tsp ground black pepper
2 tsp peanut oil
4 tsp onions finely chopped
2 tbsp. dry sherry
1/4 c whipping cream
2 tbsp. Dijon mustard

Directions:
Directions:
Season steaks with pepper. Heat oil in large skillet on high heat. Add steaks and cook 2 to 3 min on each side or until browned on both sides. Reduce heat to medium. Continue to cook 3 to 4 min or until medium doneness (160ºF) turning occasionally. Remove steaks from skillet and cover to keep warm. Discard dripping from skillet. Add onions to skillet and cook and stir until tender. Add sherry and stir to loosen browned bits from bottom of skillet. Stir in cream and mustard and cook until thickened stirring occasionally.
