4 boneless skinless chicken breast halves
1/4 c flour
2 tbsp. vegetable oil
4 c fresh sliced mushrooms
3 tbsp. Dijon mustard
1/2 c dry white wine
2 tbsp. chopped fresh parsley

Directions:
Directions:
Rinse chicken and pat dry. Coat chicken with flour and shake off excess. Heat oil in large skillet on medium-high heat. Add chicken and cook 8 to 10 min on each side or until browned on both sides. Remove chicken from skillet reserving drippings in skillet. Cover chicken to keep warm. Add mushrooms to drippings in skillet and cook and stir 2 to 3 min or until the mushrooms are tender. Stir in mustard and wine and return chicken to skillet. Bring to boil. Reduce heat to medium-low and cover. Simmer 7 to 10 min or until chicken is cooked through (170ºF). Sprinkle with parsley.
