3 c. flour
2 c. sugar
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 c. chopped pecans
3 eggs, beaten
1 1/2 c. vegetable oil
2 c. mashed bananas (4-5)
8 oz. can crushed pineapple with juice
2 tsp. vanilla (or flavored extract like orange)

Optional= 1 c. of your favorite dried fruit; raisins, dried cranberries

-Combine dry ingredients; stir in nuts & set aside
-In another bowl, combine remaining ingredients; add to dry ingredients; stirring until moistened.
-Spoon batter into 2 greased & floured 9x5x3 loaf pans.
-Bake at 350º for 1 hour and 5 mins or until done.
-Cool 10-15 mins before removing from pans
-Serve warm with butter or cream cheese on top
