Ingredients: 1 lb. ground beef or turkey 1 large chopped onion 3/4 c. water 1 packet of dry taco seasoning mix 1 can of Mexican corn, drained 1 can Rotel tomatoes 1 can black beans, drained 1- 24oz jar of your favorite salsa 1 tsp. parsley flakes 1 tsp. garlic powder 1 tsp. onion powder 1 bag of cooked white or brown Success Rice 1 c. shredded Mexican Four Cheese
Optional: tortilla wraps, lettuce, Tostitos, salsa, onions, sour cream, shredded cheese, black olives, and jalapeño peppers.

Directions:Cook rice as directed, set aside. Meanwhile, in a large skillet brown meat and onion; drain fat. Stir in water and taco seasoning into the meat, cover. Bring to a boil, reduce heat and simmer for one minute; stir. Add Rotel tomatoes, corn, beans, salsa, 3 seasonings & rice. Cook over medium heat for 20 mins until heated through; stirring frequently. Stir in cheese until melted and serve.
This is a fun dish the can be served as a main dish or with tortilla wraps, in taco shells, on top of lettuce for a taco salad, on top of Nacho chips or with Tostitos chips.
Optional toppings; salsa, chopped onions, sour cream, shredded cheese, black olives, and jalapeño peppers.
For added favor, prepare the nigh before, put in a baking dish and refrigerate overnight. Then pre-heat oven to 225º and warm in oven until heated thoroughly. |
