1 cup plain greek yogurt
1 T lemon juice
1 garlic clove, minced
1 chopped cucumber
1 T kosher salt
1 T chopped fresh dill

Directions:
Directions:
Peel cucumbers. Cut in half lengthwise and remove seeds (or use seedless cucumber and skip this step). Put cucumbers in colander, sprinkle with 1 T salt and let stand for 30 minutes to draw out moisture. Drain well and wipe with a paper towel. In food processor, combine cucumbers, garlic, lemon juice, dill and black pepper. Process until well blended then stir in yogurt.
