Ingredients:  
-3 cups cubed chicken breast (cooked), 1/2 cup chopped yellow/orange peppers, 1/2 cup chopped onions, 1 package fresh spinach, 3 Tbsp butter, 1/3 cup milk, 2 cups cheddar cheese/grated, 2 cups cottage cheese, Parmesan cheese, 1 tin cream of chicken soup, 1 tin sliced mushrooms, 1 tin water chestnuts. lasagna noodles

Directions:
Directions:
Saute onion and peppers in 3 bsp butter.
Stir in soup, milk,mushrooms, chestnuts,cheese, cook until blended
Add chicken and slightly steamed spinach to mix
Spread 1/3 of mixture in 9 X12 pan c/w 1/3 cottage cheese on top. Add 1st layer noodles
Repeat with second 1/3 of mixture, cottage cheese and noodles
Spread remaining 1/3 of mixture and sprinkle with Parmesan cheese
Preheat oven to 350ºF and bake for 50 min

excellent reheated for 2nd meal (if any left).

I just want to add to Doug's comment. Doug offered to make a meal on one of the days shortly before Barry passed away, when we had a houseful to feed, and this was the recipe he chose. It brings back a memory of family being together to support Barry in any way we could during his final days and to make sure he didn't spend them alone. (not to forget this is delicious!)
