Ingredients: 9 egg yolks 1 c sugar 12 oz semi-sweet chocolate broken into small pieces 3/4 c unsalted butter 9 egg whites Pinch of salt 1/2 pint whipping cream 2-3 T powdered sugar

Directions:Preheat oven to 350º. Use middle rack. Butter an 8 1/2" or 9" springform pan.
Beat egg yolks and sugar together until thick and light in color. In a double boiler melt together chocolate and butter. Let cool slightly and add to egg/sugar mixture and stir together.
In another bowl beat egg whites until frothy, add salt and beat until firm and shiny. Spoon 1/4 of the beaten whites into the chocolate mixture. Transfer the chocolate mixture into the rest of the egg whites and fold gently but thoroughly. Spread 1/2 of the mixture into buttered springform pan and bake 28 minutes and cool on wire rack. It will sink and crack as it cools.
Beat whipping cream and powdered sugar until thick. Gently fold in remaining uncooked chocolate mixture and spread over cooled cake, and freeze. When frozen wrap airtight. Thaw in refrigerator 2-3 hours before serving. Decorate with whipped cream. Makes 10 - 12 servings. |
