1 eggplant
1 tomato, sliced
1/4 c. grated Parmesan cheese
Olive oil
Salt
Black pepper
Fresh basil

Directions:
Directions:
Preheat oven to 400º. Peel the black outer skin off eggplant. It is bitter. Peel like a potato then slice into 1/2 inch rounds after peeled.
Line a cookie sheet with parchment paper. Brush each side of eggplant with olive oil. Arrange eggplant rounds on cookie sheet and sprinkle with salt and black pepper and Parmesan. Layer once slice of tomato on top of each eggplant round. Sprinkle with more Parmesan cheese. Add fresh basil to top. Bake for about 15 minutes.
