2 lb. boneless, skinless chicken breasts
8 oz. fresh mozzarella cheese (it's gotta be fresh!)
2 ½ oz. spicy pepperoni (we get it from the deli or in a log)
2 large egg, beaten
½-1 cup Italian Style bread crumbs/panko (I prefer panko)

Directions:
Directions:
Fillet chicken breasts so they’re half as thick. Cover half of each fillet with a couple of slices of mozzarella and 4-5 pepperonis. Fold each fillet in half and secure with a toothpick. Dip each fillet in egg, then panko/bread crumbs, and place on a cookie sheet that’s been sprayed with cooking spray. Bake at 350F for approximately 30-40 minutes or until when cut in half is no longer pink.
