1 box wild rice mix, cooked
2 c. fresh pea pods (steam in microwave for 1 minute with 1 tbsp. water)
2 c. cooked chicken breast, diced (or 1 c. chicken, 1 c. shrimp)
11 oz. can mandarin oranges, drained
1 scallion, chopped
1 can sliced water chestnuts, drained
1/4 c. red wine vinegar
1 tbsp. sesame oil
1 tbsp. vegetable oil
1/4 tsp. salt
1/4 tsp. hot pepper sauce
1/4 tsp. garlic powder

Directions:
Directions:
Chill rice. Mix together first 6 ingredients and chill. Combine remaining 6 ingredients for dressing. Toss the salad with the dressing. May sprinkle with chopped, toasted almonds or pecans, if desired.
