1 lb crawfish tails
1 stick butter (1/2 cup)
1 medium sweet onion (chopped)
1 can Rotel diced tomatoes & chilies
1 can cream of mushroom soup

2 cups cooked rice

Directions:
Directions:
In a large skillet, over medium heat, melt butter & saute the onions until they are translucent. Add the crawfish, Rotel, & soup. Simmer until heated through. Serve over white or yellow rice. This is really good with a slice of garlic bread on the side.

This can easily be turned into Shrimp Ettouffe. Just use 1 lb of shelled, deveined shrimp instead of crawfish. Cook them with the onion.
