5 lbs potatoes
8 - 12 eggs hard boiled
1/2 med onion chopped (or more to taste)
5 stalks celery small diced (or more if you like it crunchier)
garlic salt
garlic powder
dried parsley
pepper
touch of yellow mustard
sweet pickle relish or chopped sweet gherkins
Mayonnaise

Boil potatoes until fork tender. let cool, peel and dice. Chop 8 eggs. Slice the other 4 for the top of completed salad. Combine all ingredients, season to taste. Be careful with the yellow mustard. Too much will totally ruin the salad! Top with sliced eggs and sprinkle with paprika if desired.
