8 oz blade steak, cut thinly
1/2 c tomato salsa
1 avocado, peeled, halved and pitted
2 Tbsp olive oil
1 sm red onion, halved and sliced into thin slices
1 poblano pepper, seeded and sliced into thin strips
1 yellow pepper, seeded and sliced into thin strips
1 jalapeno pepper, seeded and sliced into thin strips
4 large tortillas
1 c canned refried beans, warmed and divided
2 c shredded iceberg lettuce

Directions:

Stir together beef and salsa in a bowl and set aside to marinate. Scoop avocado into a small bowl and mash until smooth.

Add oil, onion, peppers to a large skillet over high heat. Cook until veggies start to soften, about 5 minutes. Push them to one side. Add beef mixture and allow to sizzle 3 sec, then stir to combine veggies. Cook until beef begins to brown, 5 min.

Spread refried beans over half of each tortilla and the avocado over the other half. Layer on the beef mix and lettuce. Roll up.
