1 package of frozen spinach, thawed & drained
3 pieces of cooked bacon, crumbled
1/2 cup mozzarella cheese
1/3 cup of finely shredded onion
4 large eggs
2 cups heavy whipping cream
1/4 tsp salt
1/4 tsp pepper
1/8 tsp ground pepper

Directions:

Spray Standard size 12-muffin tin pans with cooking spray.

Layer the dish with spinach, bacon bits, onion & cheese

Whisk eggs, cream, salt & ground pepper together.

Pour egg mixture onto each muffin opening.

Bake in the over at 425º for 15 minutes.

Reduce temperature to 350, and bake for another 15 minutes.

LET STAND for 10 minutes before removing from the pan to make sure that the eggs have set
