6 egg yolks (large eggs)
1 1/2 c. sugar
1 1/2 c. sifted flour
1 tsp. baking powder
1/2 tsp. salt
6 Tbsp. cold water
1 tsp. lemon extract
6 egg whites
1/2 tsp. cream of tartar

Directions:
Directions:
Set out but do not grease 10" tube pan
Beat egg yolks until thick (at least 5 minutes)
Beat in gradually the sugar
Add baking powder and salt to the flour. Add lemon extract to the water
Beat in flour alternately with the water
Add cream of tartar to the egg whites and beat until stiff using a large bowl
Gradually and gently cut and fold the egg whites into the egg yolk mixture
Pour into ungreased pan and bake 60 to 65 minutes
When cake is done, invert and let hang until cold
