Ingredients:  
• 3 cups Flour
• 2 cups sugar
• 2 tsp. cinnamon
• 1 ½ tsp. baking soda
• 1 tsp. baking powder
• 1 ¼ tsp. salt
• 1 can crushed pineapple
• 3 beaten eggs
• 1 ½ cups oil
• 2 tsp. vanilla
• 1 cup grated carrot
• 1 ½ cups chopped pecans

Cream cheese frosting
• 3 cups icing mixture
• 12 oz. cream cheese
• 1 Tbsp. milk
• 1 tsp. vanilla

Directions:

1. Mix dry ingredients
2. Drain pineapple
3. Add wet ingredients and pineapple juice
4. Mix well
5. Add pineapple, carrot and pecans
6. Turn into greased 9 x 13 inch pan
7. Bake at 325 degrees for 1 ½ hours
8. Cool and ice
