Ingredients:  
• 7 cups vegetable stock
• 3 cups chopped celery
• 1 med onion, chopped
• ¼ cup white wine
• 2 medium potato’s, peeled and cubed
• 1 Tbsp. Dijon mustard
• 2 Tbsp. chopped rosemary
• ½ tsp. sea salt
• ½ tsp. pepper
• 1 bay leaf
• ½ cup crumbled feta
• ½ cup fresh chopped parsley

Directions:

1. In a large soup pot, bring ½ cup stock to boil,
2. Add celery and onion, sauté gently for 4 min,
3. Add wine, sauté for 2 min.
4. Add rest of ingredients except feta and parsley & bring to boil.
5. Reduce heat and simmer for 15 min or until potatoes are cooked.
6. Stir in parsley and crumbed feta.
