Glaze
• 125ml Apricot Jam
• 2 tbsp. Ketchup

Meatloaf
• 1 lb. (450 gr) Lean ground beef
• ½ lb. (225gr) Ground Pork
• 1 Finely chopped medium onion
• 2 tbsp. dry bread crumbs
• 1 Large egg, fork beaten
• ¼ tsp. salt
• Pinch of freshly ground pepper
• ¼ cup chopped parsley
• 6 tbsp. fine dry breadcrumbs
• 1 ¼ cup Finely chopped dried apricots
• ½ cup finely chopped green onion
• ½ cup finely chopped toasted almonds

1. Combine in small bowl and set aside.

Meatloaf
2. Combine first 7 ingredients in large bowl. Mix well. Turn onto sheet of ungreased foil. Shape into rectangle 9 x 15 inch and ½ inch thick
3. Sprinkle with parsley and second amount of breadcrumbs
4. Combine remaining 3 ingredients in separate bowl.
5. Spread over meatloaf to within 2 inches of edge.
6. Starting from the short end, roll up tightly, jelly roll style, pulling foil back as you roll. Discard foil.
7. Place meatloaf, seam side down on greased baking sheet with sides.
8. Bake uncovered in 350 F oven for 30 min. Spread ½ glaze over meatloaf
9. Bake uncovered for 15 min. further. Spread remaining glaze over meatloaf. Bake uncovered for 20-25 min. further until meatloaf is firm and meat thermometer registers 170 F in center. Let stand for 10 min before serving.
