• 2 tbsp. olive oil
• 1 med onion chopped
• 2 cloves garlic
• 1 med red pepper, diced
• 1 lb. ground beef
• 4 cups beef stock
• 3 cups elbow macaroni
• 2 med tomatoes chopped
• ½ tsp. basil
• ½ tsp. thyme
• ½ tsp. sage
• ½ tsp. pepper
• ½ cup sour cream
• ½ cup grated cheddar
• ½ cup fresh parsley
Directions:
Directions:
1. Sauté onion, garlic and red peppers in oil for 2 min
2. Add ground beef and sauté for 10 min or until cooked
3. Heat stock on stove
4. Add stock macaroni, tomatoes and spices to ground beef mix
5. Simmer for about 10 min or until macaroni is cooked and stock is reduced.
6. Mix in sour cream, cheese and parsley.
7. Cook over low heat for 5 min
