1 lb dried navy beans or 5 15 oz. cans, drained and rinsed
6 c chicken broth
1 c chopped onion or 1 t onion powder
4 garlic cloves, minced or 1/2 tsp powder
1 tsp white pepper
1/2 tsp crushed red pepper
1/4 to 1/2 tsp curry powder
1/4 tsp cumin
2 lbs cooked chicken breast cubes
1 can (15-25 oz) sweet corn (I do more like 10 or 12 oz)
1 c heavy whipping cream
chopped green and sweet red peppers (optional)
Monterey Jack cheese as garnish

Directions:
Directions:
Combine chicken broth, onion, garlic, spices, and peppers (if desired) in a large pot. Bring to a low boil. Add beans, corn, and chicken cubes. Return to a low boil. Add whipping cream. Serve with grated Monterey Jack cheese.
