1 large sweet onion, finely chopped
3 green bell peppers, chopped
2 lb. ripe tomatoes, chopped
3 large zucchini, peeled and chopped
1 clove of garlic, mashed
⅓ c. olive oil
salt and pepper to taste

Directions:
In a large frying pan, sauté onion, garlic, bell pepper and zucchini until tender. Add the tomatoes and cook uncovered for about 30 minutes stirring regularly.

Serve this with fish or meat, also traditionally served with eggs sunny side up, white rice or cubed fried potatoes. This vegetable casserole is from the central region of La Mancha, Spain.
