2 cups rice
3 cups chicken stock
1 onion, chopped
1 green pepper, chopped
2 tomatoes, diced and seeded
salt and pepper
2 cloves garlic
1/2 - 1 teaspoon cumin

Directions:
Directions:
Heat oil - add onion, garlic and pepper and cook for 2-3 minutes. Add salt, pepper and cumin. Add dry rice to pan, cook 3-4 minutes (light brown; nutty smell). Add tomatoes and chicken stock, bring to a boil. Cover and simmer 20 minutes until rice is tender.
