1 medium avocado, diced
¾ c. frozen corn, thawed or kernels from 2 ears of cooked corn
½ c. grape tomatoes,quartered
1 tbsp. fresh cilantro, chopped
2 tsp. lime juice
¼ tsp. kosher salt

Directions:
Directions:
Toss avocado, corn, tomatoes, cilantro, lime juice and salt in a medium bowl. Serve on fish, vegetables or with chips.

Excellent recipe for the boat. Makes a great side dish or appetizer.
