2½ c. seasoned croutons
1 lb. spicy pork or turkey sausage
4 eggs
2¼ c. milk
1 (10.75 oz.) can condensed cream of mushroom soup
1 (10 oz.) pkg. frozen chopped spinach, thaw, drain & squeeze dry
1 (4.5 oz.) can mushrooms, drained and chopped
1 c. sharp cheddar cheese, shredded
1 c. Monterey Jack cheese, shredded
¼ tsp. dry mustard
2 sprigs fresh parsley, for garnish

Directions:
Directions:
Spread croutons on bottom of greased 9x13 baking dish.
Crumble sausage in skillet, cook over medium heat till browned. Drain off any drippings. Spread sausage over croutons.
In a large bowl, whisk together eggs and milk till well blended.
Stir in soup, spinach, mushrooms, cheeses and mustard.
Pour egg mixture over sausage and croutons. Refrigerate overnight.
The next morning, preheat oven to 325ºF.
Bake for 50-55 minutes or until set and lightly browned on top.
Garnish with parsley sprigs and serve hot.

I like this recipe because you can keep most ingredients "on hand."
