2 cups of vinegar
1 medium onion, thinly sliceds
2 Tbsp sugar
2 tsp mixed pickling spices
2 tsp curry powder
1 tsp salt
12 hard boiled eggs, peeled

Directions:
Directions:
In a medium saucepan, combine the first 6 ingredients;bring to a boil. Reduce heat; simmer, uncovered,until onion is tender, about 5 minutes. Place 6 eggs each in 2 1-quart jars with tight fitting lids. Pour half of the hot vinegar mixture into each jar; cover with lids. Refrigerate several hours or overnight.
