2 cups freshly cooked or canned chick peas, drained and well rinsed if canned
3 garlic cloves( probably more if Kira is making )
1/2 cup fresh lemon juice ( about 3 small lemons)
1 cup tahini
1/2 salt
1/2 cup up to a cup depending on what thickness you like.
Paprika for garnish

Variations Artichoke hearts, beets, olives. Use your imagination.

Combine chickpeas and garlic in a food processor and process until a mealy texture is formed. Stop the machine and add lemon juice, tahini, slat, and 1/2 cup water. Process until very smooth and creamy, at least 2 minutes.

Stop the machine check consistency should be like mashed potatoes. With machine running add more water if needed. Also add other ingredients to make it your own favorite. Beat until creamy. Scrape into a bowl with some paprika.

Will last about one week.

My grand daughter Estelle and I made this recipe many times. We had a blast. Tried all kinds of variations. My favorite has been artichoke. I wonder what yours will be.
