12 ounces no-yolk egg yolk noodles
1 cup part-skim ricotta
3/4 nonfat plain yogurt Greek style OK
3/4 cup golden raisins
1/2 cup low or no fat sour cream
2 large eggs lightly beaten
1/4 cup unsweetened apple juice concentrate
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
dash of salt
Ground cinnamon to garnish

Preheat oven to 350 degree, spray 13x9 inch baking pan with vegetable cooking spray and set aside.

In large pot of boiling water cook noodles per instructions on bag. Drain and spoon into prepared pan.

In large bowl combine remaining ingredients, pour over noodles, toss with fork, sprinkle with cinnamon.

Bake 30 minutes or until golden brown. Enjoy
