˝ c. butter
1 c. sugar
1 egg, beaten
3 very ripe bananas, mashed
1˝ c. sifted flour (King ArthurŽ Unbleached white whole wheat flour)
1 tsp. soda
1 tsp. salt
˝ c. pecans, chopped

Directions:
Directions:
Preheat oven to 350°F and spray loaf pans with cooking oil.
Mix sugar and wet ingredients (first 4) in a large bowl.
Sift together next three ingredients in a smaller bowl, then add a little bit at a time to the wet ingredients, mix well.
Add pecans and pour into loaf pan(s). Bake for 50-60 minutes.
They are done when toothpick or knife comes out clean.

This makes 1 large loaf pan or 2 medium size pans. I buy the medium aluminum loaf pans. The large loaf pan takes longer to cook. After the bread cools, I wrap it in foil. Also freezes well.
