3 tbsp olive oil
1 med onion chopped
1 clove garlic
1 carrot shreded
2 Smoked Ham Hocks
2 32oz cartons Chicken Stock
1 pkg dried beans (Great Northern or Navy Beans)
1 tsp black pepper
2 tbsp dried parsley

This simmers on low for 4 to 5 hours.

Saute the onion in the oil until tenderon med to low heat. add the garlic when tender (don't let the garlic brown). Add the chicken stock and turn up the heat. Add the ham hocks and rinsed beans. Add the pepper and parsley. Bring to a slow boil for about 5 mins. Reduce heat for a slow simmer for about 4 to 5 hours ( depends on how you like your beans). Keep a watch and stir well about every 1/2 hour (keeps it from sticking to the bottom and over cooking). Add water as needed to keep the beans covered by about 1 to 2 inches of liquid.

I add the salt at the end. You'll have to taste because the ham hocks and the chicken stock both have some salt and the reduction of the liquid does concentrate the salt.

I usually serve with good southern cornbread or a good crusty bread.

Could use Ham, Chicken, Sausage or Beef in place of the Ham Hocks.
