1 tsp olive oil
1 small yellow onion, chopped
1 large garlic clove, chopped
14 1/2 oz jarred or boxed diced tomatoes( preferably fire roasted), drained
8 jarred artichoke hearts ( packed in water), drained and halved
1 15oz BPA free can cannelloni ( white kidney beans)
12 pitted kalamata olive, halved
4 4 oz boneless salmon fillets
pinch each of sea salt and ground black pepper
fresh basil leaves, optional

One: In a large skillet, heat oil on medium. Add onion and saute, stirring occasionally, until translucent. Add garlic and saute for 30 more seconds. Add tomatoes and stir to combine and bring to a simmer. Cook, stirring occasionally, for 10 minutes. Stir in artichoke hearts, beans and olives and simmer, stirring occasionally, for 10 minutes.
Two: Season salmon on all sides with salt and pepper. Slide salmon into tomatoes mixture, spooning mixture over top. Cover and cook for 7 minutes. Carefully turn salmon and cook until salmon is cooked through, 7 to 10 minutes. If desired, garnish with fresh basil.

for added visual appeal, pop the skillet (only if oven proof, though !!) in the broiler until your salmon develops a nice brown crust, about 1 to 3 minutes.
