2 to 3 lbs chicken, cut up into bite size chunks
1/2 cup olive oil
3 cups diced cooked ham
1 pound andouille sausage, cut into bite size chunks
2 garlic cloves, minced
3 small onions, chopped
3, 16oz cans, peeled whole tomatoes
2 teaspoons salt
1/4 to 1/2 tsp hot sauce
1 large bay leaf
1 pound shelled, deveined shrimp
1/2 cup chopped parsley

In a 5-qt pot, brown the chicken in the oil.
Take the chicken out and set aside.
Brown the ham and the sausage in the oil, then stir in the garlic and onions and saute for about 5 mins.
Return the chicken to the pot.
Stir in the tomatoes, salt, hot pepper sauce, and bay leaf.
Bring to a boil, then reduce heat.
Simmer for 30 mins.
Stir in the shrimp and simmer for 30 mins longer.
Remove the bay leaf and add the parsley.

Serve over cooked rice

Can be done in a slow cooker after browning the meats, and cooked for about 8 hrs, adding the shrimp for the last 1/2 hour and removing the bay leaf and adding the parsley.

I use basmati rice, just like the flavor and smell. Some would say the rice needs to cook in the sauce, I like the sauce and don't want it all absorbed by the rice.

I add 1 pound of andouille sausage during the browning of the ham, makes it so good.
