-1 tablespoon vegetable oil
-1 cup chopped onion
-10 oz package of frozen chopped spinach, thawed and squeezed dry
-3/4 lb Muenster cheese grated (3 cups)
-1/4-1/2 teaspoon salt
-1/8 teaspo0n pepper
-1/8 teaspoon nutmeg
-5 large eggs

Directions:

-Heat oven to 350
-Spray a 9 inch pie plate with vegetable spray (or 10 inch fluted quiche dish)
In skillet, heat oil over moderately high head
-Add onion and cook 5 minutes stirring occasionally until soft.
-Add spinach and cook a few minutes until any moisture has evaporated.
-Remove from heat.
-Mix cheese, salt, pepper and nutmeg with eggs.
-Mix egg mixture with spinach mixture and spread in prepared pie plate.
-Bake 30 minutes or until top is lightly browned.
