2 packages dry yeast
1½ c. warm water
¼ c. sugar
1¼ tsp. salt
1 egg, unbeaten
3 c. flour, sifted
2 tbsp. shortening, melted and cooled to lukewarm

Directions:
Note: This batter will be runny. Do not try to shape into rolls.
Dissolve yeast in warm water in a large mixing bowl.
Add sugar, salt and egg. Gradually add flour. Beat with mixer on medium speed. Add shortening, beating until thoroughly mixed.
Spoon batter into well-greased muffin tins, filling 1/3 full.
Let rise in warm place until batter rises to top of muffin tin, 25-30 minutes.
Bake at 375º for approximately 20 minutes.

To test yeast: Add ½ tsp. sugar to yeast when stirring it into water. If it foams and bubbles within 10 minutes, the yeast is alive and active.
