1 egg
3/4 cup plus 2 tbsp packed brown sugar
1/2 cup butter, melted and cooled
1 1/2 tsp vanilla extract
3/4 cup plus 2 tbsp all purpose flour
1/2 tsp baking soda
1/8 tsp salt
3/4 cup coarsely chopped pecans
2/3 cup flaked coconut

Directions:
Directions:
Heat oven to 325.

In a large mixing bowl, beat egg and brown sugar for 3 minutes. Add butter and vanilla, mix well. Combine flour, baking soda and salt in a bowl. Slowly, add to brown sugar mixture, beating until just combined. Stir in pecans and coconut.

Spoon mixture into muffin tins, filling just 1/4 full, bake 10-12 minutes.
