Ingredients:  
• 60 gr butter
• 1 tablespoon Golden Syrup
• 1 Cup SR Flour
• 1 ½ Teaspoon Ground ginger
• ½ cup sugar
• ½ cup coconut
• 1 egg

Lemon icing
• 1 cup icing sugar
• 30 gr butter
• 2 teaspoon lemon juice
• 1 teaspoon grated lemon rind
• 1 teaspoon hot water

Directions:

1. Melt butter and sugar over low heat
2. Sift flour and ginger, combine sugar coconut and lightly beaten egg
3. Pour in melted butter and golden syrup
4. When all combined press into a well greased lammington tin (11” x 7”) and bake in moderate oven for 25-30 mins.
5. When cool, spread with icing and cut into squares

Lemon icing
1. Sift icing sugar into a bowel.
2. Combine soft butter, lemon juice, lemon rind and hot water
3. Stir until butter melts.
4. Mix in icing sugar until soft
