Grilled Snapper with Lemon Potatoes Recipe

2 tablespoon Oregano chopped
2 tablespoon Parsley chopped
1 tablespoon lemon zest finely grated
2 cloves Garlic, sliced
cup olive oil
3 potatoes, thinly sliced
250 gr cherry tomatoes
4 snapper fillets
Green salad to serve
Lemon wedges

1. Preheat oven to 2000 C.
2. Place Oregano, parsley, lemon zest, Garlic and olive oil in a large bowl, season with sea salt and freshly ground pepper. Whisk to combine, and transfer the mixture to a small bowl
3. Add potatoes to the large bowl and toss to combine
4. Spread potatoes onto a large, oiled baking tray and bake for 20 mins or until golden brown
5. Remove tray from oven and switch oven to grill setting. Place snapper and tomatoes on top of potatoes, spoon over remaining herb oil and grill for 6 8 mins
6. Serve with fresh salad and lemon
