• 1.7kg Butternut pumpkin
• 1 tablespoon oil
• 4 spring onions
• 2 cloves garlic, crushed
• 2 tablespoon chopped fresh lemon grass
• 2 tablespoon green curry paste
• 1 small red chili, chopped
• 2 cups chicken stock
• 1 x 400 ml can coconut milk
• 1 ½ tablespoon fish sauce
• 2 tablespoon chopped fresh coriander

Directions:
Directions:
1. Peel pumpkin and cut into 2cm cubes
2. Heat oil in a pan and add spring onions, garlic and lemon grass, curry paste and chili. Cook stirring until spring onions are soft.
3. Add pumpkin and cook, stirring for 5 mins
4. Add chicken stock to pan and bring to boil. Cover and simmer for about 15 mins or until pumpkin is tender
5. Stir in coconut milk, fish sauce and chopped coriander. Stir over heat until hot
6. Serve soup garnished with sprig of coriander and sour cream.
