1 green pepper, diced
1 red pepper, diced
1 orange pepper, diced
1 small red onion, diced
1 bunch fresh cilantro, leaves chopped
1 small jalapeņo pepper, cored and diced
juice of 1 lime
1 can corn, drained
1 can black beans, drained
2 teaspoons chili powder
2 teaspoons cumin
1/4 cup cider vinegar
1 tablespoon sugar
1/3 cup vegetable oil
1 teaspoon salt

(3 cups cooked wheat berries - directions below)
4 cups raw whole wheat
10 cups water
1 tablespoon salt

How to make wheat berries:
Oil a large (4 quart or larger) slow cooker and fill with wheat, water and salt. Cover and cook on low all night for 8-10 hours. (Cooked wheat may be bagged and stored in the refrigerator for at least a week or in the freezer for months)

Combine the rest of the ingredients in a bowl. Toss well. Chill for at least 1 hour before serving.
