5 # ground beef
5 tsp Morton Tender Quick
1/4 c mustard seed
3 T. garlic powder
1 tsp cayenne powder
1 T. red pepper flakes
1 T. salt
1/2 tsp. hickory-flavored liquid smoke

Directions:
In a large bowl, mix all together well. Cover with plastic wrap and refrigerate for three days, mixing well once daily..
On the fourth day, preheat oven to 200º
Shape the mixture into 5 logs and place on a wire rack over a drip pan. Bake for 8 hours then remove to cool on paper towels. Let cook, then wrap logs individually in plastic wrap. Chill completely before slicing. They freeze well. Chill before freezing.
