1/2 head Romaine lettuce
1/2 head Iceberg lettuce
medium red onion
1 small jar chopped pimento
1 jar marinated artichoke hearts, cut into smaller pieces
3/4 c. olive oil (including artichoke oil)
1/4 c. red wine vinegar
1/4 c. Parmesan cheese (*the secret is LOTS of Parmesan!)
1/2 tsp. salt and pepper

Assemble both lettuces, onion, chopped pimentos and artichoke hearts in a salad bowl. Blend the remaining ingredients together for the dressing. The secret is LOTS of Parmesan cheese!!
