Ingredients:  
Ingredients:  
• 1 x 23cm pie shell
• 380 ml water
• 4 – 5 x 20 ml spoons corn flour
• 2 egg yolks
• 120 ml lemon juice
• 2 strips of lemon rind
• ¾ cup sugar
• 1 x 20 ml butter

Meringue
• 2 egg whites
• 4 x 20 ml spoons sugar

Directions:
Directions:
1. Blend corn flour with water
2. Add egg yolks, lemon juice, rind, sugar and butter
3. Stir over heat until the mixture thickens
4. Cook for 2 mins
5. Remove rind and allow to cool a little
6. Pour into a cooked tart shell
7. Whisk egg whites until stiff, gradually adding sugar. Beat until sugar dissolved
8. Pile on top of filling
9. Brown lightly in a slow oven
10. Serve with boiled custard
