Chocolate Éclairs Recipe

60 gr butter
300 ml water
120gr plain flour
3 large eggs
¾ cup chocolate icing
Icing sugar

Boil butter and water
Remove from stove and stir in flour all at once, beat until smooth
Beat well over heat until mixture leaves the side of the saucepan
Allow to cool slightly
Add eggs - one at a time, beating well after each has been added,
Using a bag with a plain nozzle – pipe out 6-8cm lengths onto a greased tray.
Bake in a moderate oven for 30-40 mins, gradually reducing heat, DO NOT open oven door for first 20 mins
When cool, slit sideways and fill with sweeten whipped cream and coat with chocolate icing.
