1 cup almonds, divided
3 cups old fashioned oats
1/2 tsp salt
1/3 cup brown sugar
1/3 cup honey
3 TBS coconut oil
1/4 tsp vanilla

Directions:
Directions:
Preheat oven to 350º. Pulse 1/2 of almonds in food processor until very finely chopped. Pour into a large bowl. Chop the other 1/2 coarsely and add to bowl. Pour oats, salt, and sugar into bowl. Combine.
In a small bowl combine oil and honey and heat 40 seconds. Stir to dissolve. Pour oats onto parchment lined jelly roll type pan. Bake for 5 minutes. Stir. Bake 5 more minutes. Pour out onto waxed paper to cool making sure it is in a thin layer. After it cools, break into clusters. Store in an airtight container.

I have subbed all kinds of different nuts and have used ground flax with wheat germ as part of the ground almonds. It turned out really well.
