2 c. cooked squash
1 c. brown sugar
1/4 tsp. nutmeg
2 c. milk
2 eggs
1/2 tsp. salt
1/2 tsp. ginger

Directions:
Directions:
Steam hubbard of similar type of squash or use canned squash. Beat the eggs in a small bowl. Combine the squash, eggs and sugar in a medium sized bowl. Add the remaining ingredients. Pour the mixture into a pastry-lined pie plate. Heat at 425º for 10 minutes. Then, reduce to 350º and bake for an additional 35 minutes or until the mixture is firm.
