-1 pkg of Simply Organic Taco Seasoning
-2-3 Large Boneless Chicken Breast Grilled
-1- 14oz can of Diced Tomatoes
-2 cans of Rotel
-1- 15 oz can of Creamed Corn
-2- Boxes of Organic Chicken Broth (add water to your preference)
-2 cups Plain Unsweetened Almond Milk
-2-3 Fresh Limes Squeezed
-1-15 oz can of Black Beans drained & washed
-1 can of garbanzo beans drained & washed
-1 Medium Banana Pepper (fresh)
-1 Bag of Tortilla Strips Santa Fe Style
-Tofutti Better Than Sour Cream
-Shredded Cheese of your choice (optional)

- Place your chicken breasts into a Ziplock bag, seal up the bag and pound the chicken until the pieces are evenly thick. This is an important step so that your chicken cooks evenly.
- Open the taco seasoning and sprinkle 1/3 to 1/2 the packet over both sides of the flattened chicken and place chicken breasts on your grill, George Foreman or in a skillet. Set remaining seasoning aside.
-While your chicken is grilling, dump the following ingredients into a pot: Chicken Broth, Tomatoes, Rotel, Creamed Corn, Almond Milk, and the remaining Taco Seasoning.
- Remove the chicken from your grill and let it cool.
- Drain and rinse the Black Beans and Garbanzo Beans then add to the pot.
- Cut 2-3 limes and squeeze juice into the pot.
- Dice the Banana Pepper and add into the pot.
- Shred the grilled chicken and add to the pot.
- You can eat the soup right away or you can allow it to simmer for an hour. This soup always tastes it's best after sitting in the fridge overnight.
- Add desired toppings (sour cream, tortilla strips, shredded cheese)

This soup was originally an experiment in my kitchen using ingredients I already had so the Nutrition Facts and servings are an estimate.
You can cook the chicken another way; I think grilling it tastes the best.
Draining and rinsing the beans is important to reduce sodium and most importantly reduce "indigestible carbs" ;)
