3 eggs
1 cup granulated sugar
2/3 cup pumpkin
3/4 cup flour
1 tsp. baking soda (I changed to Tbl)
1 tsp. cinnamon(Also changed to Tbl)

Filling;
8 oz. softened cream cheese
4 tsp. soft butter(changed to Tbls.)
1 cup 10x sugar
1/2 tsp. vanilla
Directions:
Directions:
Beat eggs; add to this and mix well;sugar,pumpkin,flour,baking soda and cinnamon.
Spread on jelly roll pan lined with wax paper or foil. Bake at 370ºF for 10-12 minutes. (Line jelly roll pan with parchment paper sprayed with a little Pam spray).
Remove from oven and turn over on towel coated with 10X sugar. Roll up and let cool.
Unwrap and spread with filling. Roll up lengthwise and wrap in towel. Refrigerate 24 hours. Slice to serve.

Filling;
Beat together cream cheese,butter, 10x sugar and 1/2 tsp. vanilla.

Wrap in Saran wrap and then in foil. Use the towel to help you roll if needed.

There is no question..this recipe is unquestionably Lucia's . She even made a video to show off her technique! It is really good and is great to have frozen over the holidays when you need to pull out a dessert!
